You need to make sure the Speech to Text transcriber supports arabic. I am aware that Gladia does (https://docs.gladia.io/chapters/limits-and-specifications/languages) and maybe azure (https://learn.microsoft.com/en-us/azure/ai-services/speech-service/language-support?tabs=stt) otherwise it wont work because it needs to transcribe in arabic.
