It's not hard to build an MVP and deploy, but you'll run into issues like latency (primarily because of LLM calls or not having dedicated clusters). Also it won't be feature rich (you'll have to make things like agent handoff or workflows yourself). Pipecat has flows, but don't know how good pipecat cloud is yet.
