The assistant will do it itself. It just needs to be prompted to do it and like the docs say, you have to iterate on the prompting and test test test. So my multilingual assistant has been given very specific prompts and manual translations of how to switch and key phrases to say and look for when it does. I've also added custom language based for the languages via the query tool.
