@Giacomo Mascherin Try different models (and versions) for transcriber aswell as voice to find the optimal configuration for your setup. I am using german language and had troubles with Nova 3 as transcriber. Also in your prompt you can instruct to use italian language as output. Hope that helps, all the best!
