You'll need to use workflows. With workflows, each chat mode can have its own assistant and other settings. I have an assistant that auto detects language, sets a variety alright and then continues the workflow depending on the language. It definitely requires some effort and adds repeated nodes since each node after the language selection will have to have a version for every assistant.
