Hey KONI, could you please switch your org from Daily to Weekly channel and then recreate your assistant? After that, you won't be getting this issue ever again. What happens is when you are on Daily channel and you receive daily updates, sometimes you get faulty feature updates which result in failures such as saving the assistant. Try changing org to Weekly channel, and then it will be resolved.
